When you grind this coffee, the perfume of this thing will waft all over the house. It's intoxicating. The MOST floral of all the co-ferments we have on deck for you, this Lychee WASHED co-ferment is sweet, sparkly, & has insane UMAMI like taste/smell. It's so crazy. If you hate Lychee, you'll 100% hate this thing. If you love Austrian and Alsatian natty white wines, this will blow your mind! Definitely recommend brewing at higher ratios to get EXTRA complexity out of these!
ABOUT JAIRO
Jairo Arcila, a third-generation Colombian coffee grower from Quindio, is married to Luz Helena Salazar, and together they have two children, Carlos and Felipe Arcila, co-founders of Cofinet. Jairo dedicated over 40 years to being the Mill Manager for Colombia's second-largest exporter until retiring in 2019. Acquiring his first coffee farm, Finca La Esmeralda, in 1987, Jairo planted his initial Caturra lot while concurrently working full time.
Through careful savings, Jairo expanded his holdings to include five more farms—Villarazo, Mazatlan, Santa Monica, Maracay, and Buenos Aires. During harvests, Jairo provides employment, significantly impacting the local community's economy.
Guided by his sons, experts in Specialty Coffee production, Jairo enhanced the picking, sorting, and processing of his coffees. They also assisted in cultivating exotic varieties such as Pink Bourbon, Java, Papayo, and Gesha across all his farms. Empowered by his sons' guidance, Jairo crafts exceptional coffees with remarkable flavor profiles.
Beyond coffee, Jairo cultivates mandarin, orange, plantain, and banana on his farms. He relishes starting the day with a hearty breakfast and cherishes valuable moments spent with his family.
